பெப்பர் சிக்கன் – Pepper Chicken
Pepper chicken is an easy recipe that’s prepared with ground pepper as a major spice. This chicken is a dry gravy variety, that’s also a good choice as starter in party. It’s also a great option as side dish to any rice variety. Pepper chicken can be prepared in many different ways by adding more veggies like onion, red bell pepper and green bell pepper. Indian version of pepper chicken mostly prepared with small onion and spices only.
Ingredients for Pepper Chicken
Chicken – 1/2 kg
Small onion – 1/2 cup (chopped)
Ginger garlic paste – 1 tbs
Sesame oil – 2 tbs
Curry leaves – 1 spring
Fennel seeds – 1/4 tsp
Garam masala – 1/2 tsp
Turmeric powder – 1/4 tsp
Cilantro for garnish
Salt as needed
Spices
Fennel Seeds – 1 tsp
Cumin seeds – 1 tsp
Black pepper – 1 tsp
Directions
Pre-preparation
Dry roast the spices in a pan in medium flame.
Let them cool down completely.
Grind the spices into fine powder.
Cooking Chicken
Heat a pan with oil in medium flame.
Add fennel seeds, curry leaves and wait until leaves pops.
Now add chopped onions and ginger garlic paste.
Stir the ingredients until the onion color changes to golden brown.
Now add garam masala, turmeric and salt.
Mix everything well and add the chicken.
Stir well and close the pan with lid.
Turn the flame into low.
Change the flame to medium once the chicken starts to emit water.
Cook the chicken in medium flame until completely cooked.
Add the ground spices and give a good stir.
Again turn the flame into low until oil comes out.
Switch off the flame and garnish with cilantro.
Notes
Use chicken thighs with bone for best results.
