கடலை பக்கோடா (Peanut Pakkoda)
Peanut Pakkoda called as கடலை பக்கோடா in Tamil is all time favorite for everyone in Tamil Nadu. Preparing pakkada at home is easy. Follow the tricks given below in this masala kadalai recipe for a tasty, healthy and crunchy pakora.
Ingredients for Peanut Pakkoda
Peanuts – 2 cups
Besan flour – 3/4 cup
Rice flour – 1/4 cup
Chilli powder – 2 tsp
Garlic – 3 cloves crushed
Hing – 1 pinch
Salt as needed
Cumin seeds – 1tsp
Water – 1/2 cup
Directions
Mix all the ingredients except water in a mixing bowl.
Add water little by little and stir to mix thoroughly.
Take a pan with oil and allow the oil to heat.
Keep the flame low otherwise peanut won’t cook.
Start putting peanuts into oil.
Make sure that no more than two peanut stick together.
Stir occasionally and take the entire batch out when the bubbles stopped (now the color will be golden brown).
Allow the peanut pakkoda to cool down for about 5 minutes.
Notes
The mix should not be dry, it should flow easily into the oil when you drop using your hand – see the picture.
Don’t taste the pakoda immediately, allow the peanuts to cool completely otherwise it won’t be crispy.
