பாவ் பாஜி – Pav Bhaji
Pav bhaji is a fast food dish from North India, consisting of a thick vegetable curry served with a soft bread roll (pav). It’s origins are in the state of Maharashtra. Vegetables in the curry may commonly include potatoes, onions, carrots, chillies, peas, bell peppers and tomatoes. Street seller usually cook the curry on a flat griddle (tava) and serve the dish hot.
Ingredients for Pav Bhaji
Pav/ Bun
Potato – 2 (boiled &mashed)
Tomato – 2 (chopped)
Peas – 1/4 cup
Beans – 1/4 cup(chopped)
Green bell pepper – 1/2(optional)
Onion – 1 (finely chopped)
Ginger garlic paste – 1 tsp
Pav bhaji masala – 1 tsp
Kasturi methi – 1 tsp
Red chilli powder – 1 + 1/2 tsp
Turmeric powder – 1/4 tsp
Butter – 1+1 tbs
Cilantro – 2 tbs
Lemon juice – 1/2 tbs
Food color optional
Salt as needed
Directions
Prepare Bhaji
Heat butter in a pan and add veggies (tomato, peas, beans, potato).
Add salt and water then close the pan.
Cook the veggies in full flame until completely cooked.
Mash the veggies for a minute.
Add spices, cilantro, Kasturi methi and mix well.
Make hole in the mashed veggie mix.
Add another 1 tbs butter inside the hole.
Now add ginger garlic paste and onion over the butter.
Sauté them until color changes, add chilli powder and food color.
Combine everything well, then add lemon juice.
Add some water and adjust the consistency.
Once again mash the gravy.
Bhaji ready.
Preparing Pav
Heat tava with butter on it.
Slit the bun and toast in medium flame on both sides.
Serve the pav with bhaji.
