பருப்பு அடை (Paruppu Adai)
Paruppu Adai is one of my favorite recipe. Whenever I go to South Indian restaurant, I use to order paruppu Adai & Avial. Adayar Ananda Bhavan’s Adai Avial is very tasty and popular. Paruppu Adai is a very healthy diet. This does have good fibre content and also protein rich. This is one of the best breakfast that gives good energy.
Ingredients for Paruppu Adai
Soak
Toor dal – 1/2 cup
Moong dal – 1/2 cup
Channa dal – 1/2 cup
Tempering
Coconut oil – 1 tbsp
Mustard seeds & urad dal – 1/2 tsp
Curry leaves – 1 spring
Hing – 1/4 tsp
Spices to Grind
Coconut – 1/3 cup (chopped)
Cumin seeds – 1 tsp
Green chilli – 3
Other Ingredients
Salt as needed
Cilantro – 1 tbs
Directions
Soak the dal for at least 30 minutes.
Wash the dal and grind it coarse.
Grind the spice ingredients without adding water separately.
Heat a pan with oil then add mustard seeds & urad dal.
After the dal cracked add curry leaves.
After the leaves popped switch off the flame and add hing.
Add ground spices, salt, chopped cilantro and tempered ingredients to the ground dal.
Pour enough water to the batter and mix well.
Check the consistency as shown in the picture.
Heat a dosa pan then pour one scoop of batter into the pan.
Spread the batter in circular motion and form round dosa.
Pour little oil around the dosa.
After a minute flip the dosa and cook another minute.
Paruppu Adai ready.
Serve Adai with Avial/ coconut chutney/ jaggery/ butter.
