பனீர் குர்குரே – Paneer Kurkure
Paneer Kurkure is a tasty crunchy snack. This kid’s favorite recipe is an easy to prepare one. This is also a perfect starter for kids party. Paneer is an all time favorite for my kids, they ask me to try more varieties in paneer. I enjoyed cooking this recipe because this is a no fail recipe, it won’t let the paneer to become rubber consistency. This recipe keep the paneer softness inside and gets crispy outside.
Ingredients for Paneer Kurkure
Green Chili Paste
Cilantro chopped – 1/2 cup
Green chilli – 3
Basic Marination
Paneer – 400g
Ginger garlic paste – 1 tsp
Turmeric powder – 1/2 tsp
Lemon juice – 2 tbs
Salt as needed
Main Marination
Cilantro green chilli paste – 2 tbs
Besan flour – 1 tbs
Rice flour – 1 tbs
Corn flour – 1 tbs
Garam masala – 2 tsp
Cumin powder – 1 tsp
Frying
Corn flakes – 1 cup
Oil for frying
Directions
Green Chili Paste
Take 1/2 cup chopped cilantro and 3 green chilli in a mixie jar.
Grind the mix into fine paste by adding little water.
Cilantro Chili paste.
Basic Marination
Slice the paneer into strips as shown in picture.
Take a mixing bowl and add all the marination ingredients.
Mix everything well.
Marinate this mix for 10 minutes.
Main Marination
Add cilantro green chilli paste into the paneer marinated bowl.
Also add besan flour, rice flour and corn flour into the bowl.
Drizzle some water and mix gently (don’t add much water).
Now add cumin powder, garam masala and salt.
Once again mix gently.
Marinate this mixture for 15 minutes.
Frying
Heat oil in a frying pan and keep the flame medium.
Crush the cornflakes and roll the marinated paneer over that.
Add one paneer at a time into the frying pan.
Fry the paneer strips batch by batch.
Paneer kurkure ready.
Notes
Choose best paneer for the recipe.
If you have unsweetened breakfast cornflakes use that directly for this recipe.
In case if you have uncooked cornflakes, fry the cornflakes and then crush it (refer the cornflakes mixture post for frying).
