Palmier Cookies
Palmier cookies origin is France. In French palmier means palm tree leaf. Palmier cookie is a French pastry in a palm leaf shape or a butterfly shape. This cookie need very less ingredients and the steps are easy to follow but it takes more time to prepare. It is kid’s favorite snack.
Ingredients for Palmier Cookies
All purpose flour – 1 cup + 1/2 tsp
Butter – 1 tbs + 4 tbs
Sugar – 1 tbs + drizzle
Oil for drizzle
Salt – 1/2 tsp
Directions
Dough Preparation
Take the softened 1 tbs butter in a mixing bowl and add 1 tbs of sugar.
Mix both together until smooth.
Add the all purpose flour and salt then mix.
Pour water little by little and start kneading.
Knead the dough for 5 to 10 minutes.
Drizzle some oil over the dough.
Cover the dough with the plastic wrap and let it rest for 10 minutes.
Layering
Take the softened 4 tbs butter in a small bowl.
Add 1/2 tsp flour and mix well.
Transfer the dough into the work surface.
Line the dough with knife as shown in picture.
Dust the dough and roll out into rectangle shape (10cm*30cm).
Apply the butter all over the rectangle dough.
Mark the rectangle 10cm in both edges.
Fold the rectangle as shown in the picture.
Cover the dough with the plastic wrap.
Keep the dough in refrigerator for 30 minutes.
Take out the dough from refrigerator and roll out slowly by dusting flour.
Roll the dough again into rectangle shape (10cm*30cm).
Fold the dough again in the same way and keep it in the refrigerator for 30 minutes.
Repeat the process for 2 more times.
Shaping
Roll the dough into thin and large rectangle size.
Drizzle some sugar both sides and roll dough.
Fold the dough as shown in the picture.
Cover this with plastic wrap and keep it in refrigerator for 10 to 15 minutes.
Take out the dough and cut into thin slices.
Baking
Heat the oven into 350°F.
Line the cookie sheet with parchment paper.
Place the dough slices in the cookie sheet.
Drizzle some sugar over the heart shape dough (this is optional).
Keep the cookie in the middle rack of the oven.
Bake the cookies for 20 to 25 minutes.
Let it rest for 10 minutes.
Palmier cookies are ready.
Notes
The heart shape dough might become more moisture at times.
Roll out the shape and roll again into heart shape.
This makes the cookie to cook evenly and crispy.
