பால்கோவா ஐஸ்கிரீம் (Paalkova Ice cream)
Paalkova ice cream is an ice cream variety made from palkova. We can use homemade or store bought palkova for this recipe. This ice cream is used to make Jigarthanda as well. We may pour this in popsicle mold and have it as kuchi ice or kulfi.
Last time when I prepared this at home, everyone in my family finished this paalkova Ice Cream before I made Jigarthanda.
Ingredients for Paalkova Ice cream
Milk – 2 1/2 cup
Heavy cream – 1 cup
Palkova – 1/4 cup (50g)
Sugar – 2 tbs for caramel syrup
Sugar – 2 tbs for milk
Nannari syrup – 2 tbs
Directions
Caramel Syrup
Take a pan and add sugar.
Heat the sugar in medium flame until melted.
Add 1 tbs of water and stir well.
Caramel syrup ready.
Boil Milk
Boil the milk with sugar in a pan.
Stir the milk until reduced into half.
Add paalkova and stir well.
Also Add the nannari syrup and caramel syrup then stir well.
Change the flame into low and cook for another 5 minutes.
Let the milk mix cool down completely.
Blend the heavy cream in a blender.
Pour the cooled down boiled milk into the blender.
Blend it well until mixed.
Make Ice Cream
Transfer the mix into a freezer safe bowl.
Keep the bowl in freezer for 4 hours.
Blend the mixture again in blender.
Again keep the mix in freezer for another 4 hours.
Blend the mix again and pour it in a container.
Keep the mix in freezer for another 12 hours.
Palkova ice cream ready.
Notes
Close the ice cream with plastic wrap or aluminum foil.
Must blend the mix at least 2 times otherwise ice cream will be mixed with chunks of ice.
If you want more color, add more amount of caramel syrup.

Ice Cream mix is ready 
Store in freezer for 4 hours 
Blend again after 4 hours 
Freeze another 4 hours 
Blend once again and pour 
Store in a container 
Cover with wrapper 
Freeze overnight 
Paalkova Ice Cream ready
