Paal Sarbath

பால் சர்பத் (Paal Sarbath)

Paal sarbath is a healthy drink prepared by natural ingredients. Sarbath is basically prepared with lemon juice but this milk sarbath is prepared using milk. It almost tastes like milk shake. There are different variations available in this preparation. Badam pisin, basil seeds and nanari syrup are the other important ingredients for this recipe, these are good to reduce body heat. A healthy summer drink recipe.

Ingredients for Paal Sarbath

Full fat Milk – 1 litre (5 cups)
Basil / Sabja seeds – 1/2 tbs
Almond gum/ Badam pisin – 1/2 tbs
Nanari syrup – 1/4 cup + serving
Saffron – 1 tsp + garnish 
Almond slices for garnish 

Directions

Pre-preparation

Soak the  almond gum in water for overnight. 
Soak basil seeds in water for 15 minutes.

Boil Milk

Pour milk in a pot and boil it in full flame.
Turn the flame into medium when the milk start raising. 
Take out the milk fat from the sides and mix into the boiling milk. 
When milk reduce to 600ml (3 cups) stop the flame.
Add the saffron and give a gentle mix. 
Let the milk to cool down completely. 
Milk’s color is changing now because of saffron. 

Mixing

Add 1.5 tbs each of soaked basil seeds and almond gum into a mixie jar. 
Pour nanari syrup and boiled milk into the jar.
Blend the mixture until well mixed. 

Serving

Take serving glass and add 1 tsp each of soaked basil seeds and almond gum.
Pour 1 tsp of nanari syrup also into the serving glass.
Pour blended mixture until glass reaches full.
Garnish with saffron and almond slices. 
Milk sarbath ready.
Serve the paal sarbath. 

Notes

I always use home made nanari syrup for this recipe for best results. 
Must use full fat milk for this recipe.
