பனை ஓலை கொழுக்கட்டை (Olai Kozhukattai)
Olai Kozhukattai is my 25th post and right in time to celebrate Tamil New year 2019. Panai olai kolukkattai is one of the famous sweet prepared to celebrate Tamil New Year in southern part of TamilNadu. Wish you all a happy Tamil New year.
Ingredients for Olai Kozhukattai
Raw rice – 1 cup
Jaggery – 1 cup (or Palm sugar or Cane Sugar)
Cardamom – 2
Shredded coconut – 1/2 cup
Dry Ginger (Sukku) – 1/4 tsp
Palm leaves (panai olai) – 8 pieces
Directions
Prepare Rice Flour
Soak the rice in water for at least 1 hour.
Drain the water and dry rice in a white cotton cloth.
Blend the rice in a blender then sift the rice flour.
Prepare Syrup
Jaggery Syrup:
Grate jaggery and take it in a pan.
Add 1 tbsp water to the jaggery keep the flame very low until it melts down.
Filter the Jaggery mix and take the syrup in a bowl.
Palm Sugar Syrup:
Grate palm sugar and take it in a pan.
Add 1 tbsp water to the palm sugar, keep the flame very low until it melts down.
Filter the palm sugar mix and take the syrup in a bowl.
White (cane) Sugar:
You can directly add sugar in rice mix.
Prepare Dough
Crush the cardamom, sukku and add it to the rice flour.
Add syrup to the rice flour and mix very well.
Make the dough into 8 balls, then make that to cylindrical shape.
Prepare Kozhukattai
Place the cylindrical dough in to the palm leaf and press it to fix it in the leaf.
Take an idly streaming pot and cook the kozhukattai for 15 mins.
Notes
Keep the rice flour little bit coarse.
Do not dry rice in direct sun light.
The consistency of dough should look like chappathi dough.
If the dough is very loose, add little bit of rice flour.
