நன்னாரி சர்பத் சிரப் (Nannari Syrup / Sarbat Essence)
Nannari Syrup is made from Nannari root, which has so much health benefits. This is perfect recipe to try during summer to get relief from heat. The syrup available in stores are usually made using artificial essences, which can harm our health. Here you can fine easy to make recipe to try at home.
Ingredients for Nannari Syrup
Nannari root – 100 g
Sugar syrup – (sugar – 6 cups + water – 6 cups)
Lemon – 1
Directions
Wash the nannari root and spread it in a plate
Allow the root to dry in direct sun for 2 hrs
Crush the root into small pieces, then grind the root into coarse powder
Take the root powder and 4 cups of water in a big pot and boil for about 10 minutes or until water reduces into half
Filter the nannari root extract by using a cotton cloth
Now start making sugar syrup
Take sugar and water in a pot and boil that until one string consistency
Add the filtered nannari extract and lemon juice then boil again
Now you see some white bubbles remove that by ladle
Stop the flame when the syrup thickens (it takes 10-15 minutes)
Let the syrup to cool and transfer it into airtight container
Keep the syrup in fridge for a longer shelf life (more than a month)

I bought Nannari roots from nattu marunthu kadai (sidha medical shop). It is also available online at Amazon.com (USA) and Indiamart.com (India)

Inside of skin – you don’t need to use these

Pour coarse root in a big pan 
Add water and stir 
Boil the mix 
Stop boiling when water reaches half 
Use cotton cloth as filter 
Extract essence from root 
Take sugar in a pot 
Add water and boil 
Boil until one string consistency 

Add root extract to sugar syrup 
Mix well 
Add Lemon Juice 
Boil the syrup mix 
Remove white forming 
Check for consistency 
Stop and cool down when Syrup thickens
