Mutton Pepper Fry

மட்டன் பெப்பர் ஃப்ரை (Mutton Pepper Fry)

Mutton pepper fry is a simple recipe but very tasty.  The spiciness of this recipe comes only from pepper. We are going to make this recipe without adding red chili. This is one of the best appetizer and it goes well with rice too. 

Ingredients for Mutton Pepper Fry

Pressure cooking Ingredients

Mutton – 1/2 kg (with bone)
Turmeric – 1/2 tsp
Salt as needed

Spices to Grind

Pepper – 1.5 tsp
Cumin seeds – 1 tsp
Fennel seeds – 1/2 tsp
Coriander seeds – 1 tsp
Cinnamon – 2 small pieces
Cloves – 4

Sauteing ingredients 

Oil – 1 tbs
Ghee – 1 tbs
Small onion – 8 – 10
Curry leaves – 1 spring
Ginger garlic paste – 1 tbs
Cilantro for garnish

Directions

Grind spices

Heat a pan with little bit of oil.
Add all the spices and roast it.
Let the spices cool down completely.
Grind the spices into fine powder.

Pressure cook Mutton

Place mutton in a pressure cooker.
Add turmeric, salt and enough water to immerse.
Pressure cook the mutton in medium flame for 20 to 25 minutes.

Cook Pepper Fry

Heat oil and ghee in a pan.
Add curry leaves and let it pop.
After the leaves popped, add chopped small onion and ginger garlic paste.
Sauté them for a minute then add ground masala and salt.
Fry them for another minute.
Now add the cooked mutton with broth.
Mix well and close the pan with lid
Cook that in medium flame until thickened.
Change the flame into low and allow the gravy to emit oil.
Switch off the flame and garnish கறி வறுவல் gravy with cilantro.
Mutton pepper fry ready.

Notes

If you want the recipe’s color to be red, add 2-3 Kashmiri chili to spice ingredients.
Depends on your mutton (young mutton) adjust the cooking time.
If you have fatty mutton reduce ghee amount.
Must add boned mutton for this recipe otherwise you don’t get the exact taste.
You may add some water to grind spices, so it will be easy to mix while sautéing.
