வறுத்து அரைத்த மட்டன் குழம்பு (Mutton Gravy)
Mutton Gravy is an easy recipe to prepare at home. The taste gets even better when you prepare masala from scratch just right before preparing the gravy. Follow my recipe for a perfect gravy.
Ingredients for Mutton Gravy
Mutton – 1 kg
Small onion – 8 (chopped)
Sesame oil – 1/4 cup
Turmeric – pinch
Cilantro for garnishing (optional)
Salt as needed
Ground Masala Ingredients
Dry Ingredients:
Coriander seeds – 2 tsp
Cumin seeds – 1 tsp
Black pepper – 1 tsp
Fennel seeds – 1/2 tsp
Cloves – 4
Cinnamon – 1 roll
Red chilli – 8
Kashmiri chilli – 2 (optional)
Wet Ingredients:
Coconut – 3 big piece
Small onion – 8 (chopped)
Garlic – 7 pods
Ginger – 2 inch piece
Tomato – 1
Directions
Preparing Masala:
Take a pan with little bit of oil and roast all the dry ingredients.
After the ingredients well roasted transfer it to a spice grinder (Mixie jar).
Let the ingredients cool down and grind the mix into fine powder.
In the same pan fry all the wet ingredients with some oil.
After the tomatoes turn mushy transfer the wet ingredients into the ground spice (add to the same mixie jar).
Allow the wet ingredients to cool down.
Now grind all the spices into fine paste.
Preparing Gravy
Take a pressure cooker and pour oil.
Add the chopped onion and saute for a minute.
Now add cleaned mutton, turmeric and give a good mix.
Close the lid and keep the flame low for 5 minutes.
Let the mutton emit oil.
Now add the ground masala paste and salt.
Add 2 – 3 cups of water and cover the pressure cooker.
Pressure cook the meat for 15 to 20 minutes.
Mutton kuzhambu ready.
Garnish kulambu with little cilantro.
