மட்டன் தம் பிரியாணி – Mutton Dum Briyani

Mutton Dum Briyani is a type of briyani, which is prepared with seeraga samba rice and different types of spices. I got this traditional recipe from my favorite aunt and I am always a big fan of her briyani. This recipe is very easy to make and a ‘no fail’ recipe. Beginners can also try this recipe easily and can get perfect result.

Ingredients for Mutton Dum Briyani

Dry Masala

Cinnamon – 2 small sticks 
Clove – 5
Cardamom – 7
Stone flower (kalpaasi) – 1/2 tbs
Fennel seeds – 3 tsp
Poppyseeds – 1 tsp 
Cashews – 1 tbs
Star annis – 1/2

Wet Masala

Garlic – 5 pods
Ginger – thumb size piece
Cilantro – 1/2 cup
Mint – 1/4 cup 
Green chilli – 4-6

Other Ingredients

Mutton – 1/4 kg
Zeera samba rice – 1.5 cup 
Bay leaves – 2 
Onion – 1 (sliced)
Sesame oil – 3 tbs
Ghee – 2 tbs
Cashews – 1 tbs
Turmeric powder – 1/4 tsp 
Curd – 1.5 tbs
Salt as needed 

Directions

Pre-prepration

Take all dry masala in a mixie jar and grind it to coarse powder.
Transfer the masala to a bowl. 
Now take the wet masala ingredients in a mixie jar and grind it to fine paste.
Transfer this ground wet masala in to a bowl as well.
Clean the mutton and slice into small pieces. 

Cook Mutton

Heat oil and ghee in a pressure cooker. 
Add bay leaves, onion and cashews. 
Stir fry for a minute and add mutton pieces. 
Sauté until color changes then add turmeric powder, dry masala and salt.
Mix everything well and add wet masala and curd.
Close the cooker and let the mixture cook in low flame for 5 minutes. 
Add 2 cups of water and pressure cook the mutton for 15-20 minutes in medium flame or until completely cooked. 

Prepare Briyani

After mutton is cooked, add water according to the water in pressure cooker now (3 cups of water must be in the pot when starting to cook).
Now add seeraga samba rice after rinsing in water.
Adjust the salt level and close the briyani pot with plate. 
Stir occasionally to make sure rice doesn’t stick in bottom.
Cook the briyani in full flame until rice cooked to 3/4th level (refer picture).
Do not open the lid from now on until finishing dum.
At this stage reduce the flame into medium low and cook for 8 minutes. 
Switch off the flame now.
Spread some burning charcoal pieces over the plate (you may place heated dosa pan over the plate too).
Leave the briyani for 15 minutes. 
Open the lid and gently stir the biriyani from side to bottom.
Mutton Dum Briyani ready.
Serve the briyani with gravy/ raita. 

Notes

I used homemade charcoal in this method. Caution while using this method as it needs more attention. 
Try it if you have a safe outdoor place or just use hot dosa pan / iron skillet.
