மட்டன் பிரியாணி (Mutton Briyani)
Mutton Briyani made using seeraga samba rice is very famous in Tamil Nadu. This particular recipe is served in Dindugal Thalapakati kadai. Seeraga samba Rice used to be called as biriyani rice in 90’s and gives a very good flavor to biriyani.
Ingredients for Mutton Briyani
Spices to grind:
For frying:
Red onion – small 1
Ginger garlic paste – 1 tbsp
Tomato – 1
Green chilli – 4
Bay leaf – 3 to 4
Cashew nuts (fry in ghee)
Cilantro
Other ingredients:
Seeraga samba Rice – 200 gm
Mutton – 250 gm
Salt – as needed
Turmeric – little
Gingelly oil – 50 ml
Curd – 2 tbsp
Directions
1. Grind the spices into fine powder.
2. Take pressure cooker and pour oil, put all frying ingredients in the above order (see ‘For Frying’ above).
3. After tomato well cooked add turmeric, salt and the spice powder (Stir well).
4. Add cleaned mutton pieces and curd, close the lid without weight.
5. Let the mutton to pour out oil for 5 to 10 min in low flame.
6. Add 200 ml water and cook for 25 min in medium flame (lid closed with weight).
7. Now, add some more water , it must be 400 ml water in the cooker now.
8. Add some more salt(per your needs), bring the flame high to boil the water.
9. It’s time to add rice, close lid and put weight, cook for 8 min in medium low flame.
10. After one whistle comes, turn off the cooker and leave it till pressure goes off.

Note: if you don’t get whistle till 8 min turn the flame to high and wait for whistle or switch off flame in 2 minutes.
