முந்திரி பக்கோடா (Munthiri Pakoda)
Munthiri pakoda is one of my favourite recipe in snack section. This is one of the rich / best snack for tea time. I’m a Ramanichandran novel lover and in most of her novel, when she describe about snack time, she always mention munthiri pakoda and Badam halwa. This recipe is very similar to Rajapalayam pakoda.
Ingredients for Munthiri Pakoda
Besan flour – 2 cup
Rice flour – 1.5 cupCashews – 20 to 25 (whole)
Hing – 1/4 tsp
Small onion – 10
Green chilli – 4
Hot oil – 4 tbsp / Melted butter – 4 tbsp
Chilli Powder – 2 tsp
Curry leaves – 2 spring
Oil – frying
Salt as needed
Directions
Chop small onion lengthwise into small pieces.
Crush the cashews into half.
Take all the ingredients except oil and onion in a mixing bowl.
Mix everything well.
Pour the melted butter or hot oil in to the mix.
Now add chopped onion and continue to mix.
Knead the flour by adding water little by little.
Just add enough water to hold the flour together.
Don’t make any shape by hand, just take the chunks made by kneading the dough.
Take one chunk of dough and add to the hot oil frying pan.
Fry the pakkada until the color change.
Take pakora out when bubble stops.
Continue to make remaining mundhiri pakora.
Munthiri Pakkoda ready.
Notes
The amount of cashews can be adjusted according to your taste.
Also you may crush the cashews into small pieces and use for this recipe.
Adding chopped cilantro and mint changes the flavor little bit and you can add it for this recipe.
Melted butter gives softness for the pakoda.
Hot oil makes crispy pakoda.
You may use combination of butter and hot oil as well.
