மோதிச்சூர் லட்டு – Motichoor Ladoo
Motichoor Ladoo is a traditional Indian sweet, which is made of besan flour, ghee and nuts. Whether you’re celebrating a festive occasion, offering prayers at a temple or simply satisfying your sweet tooth, Motichoor Laddu is a delightful choice that encapsulates the essence of Indian sweets. Motichoor” is derived from two Hindi words: “moti,” which means pearl and “choor,” which means to crush. This sweet treat is aptly named, as its appearance resembles a cluster of tiny, golden pearls.
Ingredients for Motichoor Ladoo
Besan flour – 1 cup
Sugar – 1 cup
Water – 1 cup + 1/2 cup
Orange food color – pinch
Ghee – 1 tbs
Cardamom powder – 1 tsp
Cashew nuts – 1 tbs (chopped)
Directions
Pre-Preparation
Take an aluminum foil box (size shown in the picture).
Poke the base of the box with safety.
Just give a single poke, don’t make the hole big.
Fry the chopped nuts in ghee.
Batter Preparation
Take besan flour in a mixing bowl and add 1/2 cup of water.
Mix the flour without any lumps; Add food color now and mix well.
Add more water and mix again until you reach consistency.
Batter consistency must be more watery than dosa batter (check picture for consistency).
Frying
Heat oil in a frying pan.
Keep the flame in medium low.
Just add a teaspoon of hot oil to the prepared batter.
Then pour the batter into the aluminium foil box.
Keep the box over the hot oil and move the box up and down.
Small pearls started to fall down.
Don’t fry the pearls crispy, just let them cook and take out.
Use the tea filter to take fried motis’ out.
Sugar Syrup Preparation
Add sugar and 1/2 cup water in a pan.
Boil the syrup until it comes to half string consistency or when you feel it’s sticky, stop the flame.
Add the food color and cardamom powder.
Finally add the fried moti and cook for 5-7 minutes or until the syrup observed by the moti.
Add ghee and chopped nuts in the pan and mix well.
Ladoo Preparation
Wait until you can handle the heat.
Take a handful of moti and make ladoo.
Motichoor ladoo ready.
Notes
In traditional recipe the moti is fried in ghee; if you want the exact taste use ghee for frying.
You may garnish the ladoo with saffron, pistachio and almond slices.
