மோர் குழம்பு (Mor Kulambu)
Mor kulambu / Buttermilk kulambu is a commonly prepared dish in Tamil Nadu. Mor kulambu is served with white rice and variety of vadam. Traditionally, it includes vegetables like ladies finger, cucumber, white pumpkin. This recipe is very rich in calcium and vitamin C.
Ingredients for Mor Kulambu
For Grinding
Coconut – 1 piece
Small onion – 2-3
Ginger – small piece
Channa dal – 1 tbsp
Cumin seeds – 1/2 tsp
Green chilli – 3
Main Ingredients
Curd/ yogurt – 1 cup
Cucumber – 1 big size
Turmeric powder – 1 pinch
Salt as needed
For Tempering
Oil – 1 tbsp
Mustard seeds & urad dal – 1/4 tsp
Dry red chilli – 3
Hing – 1 pinch
Curry leaves – 1 spring
Pre-preparation
Soak the channadal for 15 minutes
Add half cup of water, salt and curd to mixer jar and whisk for a minute
Directions
Peel the skin of the cucumber and chop in small pieces
Take a big pan then add the cucumber pieces, salt, turmeric powder
Pour enough water to cook the cucumber
Switch off the flame when cucumber becomes soft
Grinding Spices
Chop the coconut and add all the grinding ingredients to a mixture jar
Grind it a fine paste
Add ground spices to the cooked cucumber mixture
Cook the mixture until bubbles form
Switch off the flame Let the gravy to cool down
Now pour the whisked curd and mix well
Tempering
Take a small pan and add oil with mustard seeds & urad dal
After the seeds cracked add curry leaves and dry red chilli
Pour this to gravy
Mor kulambu ready
Serve this with rice and vadams
Notes
You may use white pumpkin, ladies finger (vendakkai) for this curry
You may whisk the curd with beater or hand mixture
