Make Goat Brain Fry easily at home

ஆட்டு மூளை வறுவல் – Goat Brain Fry

Goat Brain fry is a spicy side dish made with goat brain. Goat brain contains omega three fatty acids and nutrients. These fatty acids are good for nerves system, protecting human brain and spinal cord. But one drawback is that it is high in fat. So remember to eat goat brain moderately only. Brain fry is my all time favorite. It is very famous in “Devagi mess”, located in our home town. Whenever I go there, I never miss to taste this awesome dish.

Ingredients for Goat Brain Fry

Goat brain – 4
Ginger garlic paste extract – 1.5 tbs
Chill powder – 1 tbs
Garam masala – 1/2 tsp
Cumin powder – 1/2 tsp
Turmeric – 1/4 tsp
Coriander powder – 1/2 tbs
Corn flour – 1 tbs
Curd – 2 tbs
Oil – 2 tbs
Kasturi methi – 1/2 tbs
Salt as needed

Directions

Clean the goat brain gently in turmeric water.
Take out the silky outer layer and tiny veins. 
Take a bowl and add all the ingredients one by one other than brain.
Mix everything well together as a thick paste.
Apply the thick paste all over the brain. 
Let the spices coated brain to sit for at least 10 minutes. 
Heat oil in a pan and keep it in a medium flame.
Add the spiced  brain and cook. 
When it starts browning, turn to other side. 
After both sides cooked well, take out. 
Brain fry ready.
Serve this as a side dish or starter. 

Notes

Don’t use ginger garlic paste as it spoils the coating texture. Make sure that you are using the thick extract.
You may cut the brain into four pieces before adding spices, this let you apply more spices everywhere. 
Don’t over crowd the brain while frying.
