எலுமிச்சை ஊறுகாய் (Lemon Pickle)
Lemon Pickle is one of the best pickle for curd rice. There are several methods to prepare lemon pickle and this one is my all time favorite. This recipe is from my grandmother that she got it from my great grandmother. It tastes so good and unique and you must try. Find very simple recipe to prepare lemon pickle with just 4 lemons.
Ingredients for Lemon Pickle
Lemon – 4
Red chilli – 30 to 40
Green chilli – 8
Ginger – thumb size
Sesame oil – 1/2 cup
Mustard seeds – 1 1/2 tsp
Hing – 1 tsp
Salt as needed
Directions
Wash the lemon and dry that with towel.
Slice the lemon into small pieces.
Take the sliced lemon and salt in a non stick pan.
Cook the lemon in low flame after adding little water for 5-10 minutes.
Transfer the cooked lemon to a glass or ceramic wide bowl, which allow to stir thoroughly.
Dry roast the red chilli in a pan and powder it in a blender.
Chop the green chilli and ginger.
Add the powdered chilli, green chilli and ginger into the cooked lemon.
Take a pan and heat oil then add mustard seeds.
After the seeds cracked switch off the flame.
Now add the hing then pour the oil to the bowl.
Mix everything well with a dry spoon.
Cover the bowl with a cotton cloth or lid.
Keep the pickle in the same bowl for 2 days.
Stir the pickle twice a day.
Transfer the pickle into a glass bottle or a plastic bottle.
Notes
Ensure that pickle is fully immersed in oil.

Chop ginger and chilli 
Dry fry red chillies 
Grind the fried chillies 
Ground chilli powder 
Wash lemons and wipe 

Slice lemon in to cubic pieces 


Cut lemons 
Add salt and little water 
Boil the lemon and salt mix 

Take a ceramic or glass bowl 
Pour the boiled lemon in to bowl 
Add chopped ginger and green chillies 

Mix thoroughly 
On a small frying pan, take oil and heat it 
Add mustard seeds 
Let the mustard seeds crack 
Add hing 
Pour the oil in to the bowl 

Mix thoroughly again 
Settle down with oil on top 
Make sure to leave one layer of oil on top and close with a lid 
Mix twice a day for two days 
Transfer in to a container
