கருப்பட்டி சீடை (Karupatti Seedai)

Karupatti seedai is traditional sweet, which is mostly prepared for Gokulashtami. Sweet seedai is prepared by rice flour & Karuppatti. This sweet seedai is also prepared with jaggery. This sweet seedai is my favorite childhood snack. My mother-in-law is a specialist to do this ellurundai, she gave tips to prepare this sweet.

Ingredients for Karupatti Seedai

Raw rice – 1 cup 
Palm sugar/ Karupatti – 1/2 cup
Water – 3 tbs
Sesame seeds – 1/2 tbs
Cardamom – 3

Directions

Soak raw rice with water for 1 hour.
Rinse the rice and drain the water well.
Spread the rice in a cotton towel. 
Dry the rice in partial shade for 1 hour.
Grind the rice into fine powder. 
Sift the rice flour. 
Heat Karupatti with water until completely dissolved. 
Filter the Karupatti syrup and add little by little to rice flour. 
Add sesame seeds & crushed cardamom. 
Knead the dough well, add water if needed.
Take small amount of dough and make small size balls. 
Heat oil in a frying pan and keep the flame low medium. 
Fry all the ellu seedai and drain the excess oil in a paper towel. 
Karupatti seedai ready.

Tips for correcting dough consistency

If you don’t get crack, the dough is very tight, sprinkle water and knead dough.
If seedai breaks easily while frying, dough is very loose, drizzle rice flour and knead the dough.

Notes

Don’t over soak and don’t over dry the rice (follow the specified timings in the instructions).
Don’t knead the dough very tight or very loose.
If the seedai gets crack after frying that’s the perfect consistency.
I used white sesame seeds for this recipe, you may use black sesame seeds as well.
