கை முறுக்கு – Kai Murukku
Kai Murukku is a beloved traditional South Indian snack made from rice flour, butter, cumin and asafoetida. Crunchy and flavourful, it gets its name from the fact that it is tactfully shaped by hand. it is also a well-liked offering at religious events and celebrations especially during the time of Diwali and Krishna Jeyanthi.
Ingredients for Kai Murukku
Raw rice – 1 cup
Urad dal flour – 2 tbs
Butter – 2 tbs (softened)
Hing – 1/2 tsp
Cumin seeds – 1 tsp
Water – 1/2 cup
Salt as needed
Coconut oil for grease
Oil for frying
Directions
Let us take a look at the pre-preparation.
Rice Flour Preparation
Soak the raw rice for 2 hrs.
Rinse the rice with water.
Drain the water completely.
Dry the soaked and drained rice in shade for 2 hrs.
Grind the dried rice and sift the flour until you get the fine flour.
You get two cups of rice flour for one cup rice.
Urad dal Flour Preparation
Dry roast the urad dal in medium flame.
Don’t let the dal to change colour.
Dough Preparation
Add all the dry ingredients in a mixing bowl.
Then add the butter and start kneading.
Pour water little by little.
Dough ready.
Murukku Preparation
Spread a cotton cloth in a flat surface.
Grease hands with coconut oil.
Take a small ball of dough.
Use your fingers and make spiral shapes.
Make small three circles.
Don’t make it so tight.
Frying
Heat the oil pan in low-medium flame.
Fry the murukku and take out when done.
Kai murukku ready.
Notes
This கை முறுக்கு recipe is not an easy one but follow the recipe directions exactly with right ingredients measurements to get the best results.
If the dough’s consistency is too watery, you can’t make the shape properly. For fixing this add little bit of rice flour.
Don’t use store bought rice flour.
If you’re new to this recipe, start with small quantity like 1/4 cup rice. Within two, three times you will easily get the shape.
