காடை ஃப்ரை (Kaadai Fry)
Kaadai fry is a deep fried Small bird called Quail. I tasted this Kaadai fry first in Senkottai border restaurant called Rahmath parotta kadai, that tastes so good. After that I addicted to that taste. Whenever I get chance, I go there and enjoy the taste. After my marriage, I didn’t get frequent chances to go there, so I tried in home and got same taste. My family and friends love this taste and I’m so happy to share this recipe here.
Ingredients for Kaadai Fry
Kaadai / Quail – 4
Chilli powder – 1.5 tbs
Garam masala – 1 tsp
Turmeric powder – 1/4 tsp
Pepper powder – 1 tsp
Cumin powder – 1 tsp
Ginger garlic paste – 1 tbs
All purpose flour – 1 tbs
Corn flour – 1 tbs
Lemon juice – 1 tbs
Salt as needed
Directions
Clean the Kaadai and slit in fleshy areas, so that masala flavor gets inside while cooking.
Take a big mixing bowl then add all the ingredients except lemon juice and Kaadai.
Mix everything well and pour lemon juice, enough water.
Make thick spice paste and apply all over the Kaadai.
Also apply masala inside Kaadai as well.
Dry the spice coated Kaadai in sunlight/ shade for about an hour.
Heat oil in a frying pan and keep the flame medium.
Fry the Kaadai until crispy – make sure to turn side as well.
Kaadai fry ready.
Notes
Don’t over fry the Kaadai then it becomes hard.
Don’t skip the drying process otherwise spices will leave from Kaadai.

Let the kaadai marinate in shade 
Let is dry for about an hour 
Dried masala on kaadai 
Heat oil in a frying pan in medium flame 
Place one kaadai in oil 
Let it fry 

Turn sides 
The color changes 
Kaadai fried now 
Take out the kaadai 
Place it in a paper towel/ plate 
Continue frying all 4 
Fried Kaadai 
Don’t over fry 
All 4 is done now
