Idly/Dosa Batter

இட்லி / தோசை மாவு (Idly/Dosa Batter – simple method)

Idly/Dosa batter is needed to make idly and/ or dosa, that are famous South Indian tiffin items. We can make both with the same batter. If we have this batter at home, no need to worry about breakfast and dinner. Also we can manage Idly/Dosa with simple side dishes. We can keep this batter fresh in refrigerator for 2-3 days. If we shuffle the batter into 2 or 3 boxes, we can maintain the freshness for a week long. This batter is base for so many tiffin items like Idly, Dosa, variety of Uthappam , Mini idly, Paniyaram.

Ingredients for Idly/Dosa batter

Urad dal – 1 cup
Idly rice (Boiled rice) – 4 cup
Salt as needed

Directions

Soak urad dal and idly rice separately for at least 3 hours in water
Wash the urad dal and add to the grinder and start
Add 1/4 cup of water and carefully release the dal that are stuck (not grinding)
For every 10 minutes drizzle 1/4 cup of water
Grind the dal for 45-50 minutes
Switch off the grinder and take out the batter in a bowl
Wash the rice and start the grinder
Add 1/2 cup of water and carefully release the rice that are stuck (not grinding)


Add water as needed for grinder to grind smoothly
Grind the rice until fine coarse
Take out the batter in a bowl which we already used for urad dal batter
Add salt and 1/2 cup of water then mix well with hand
Mix until both urad dal batter and rice batter combined well
Close the bowl with lid
Keep the bowl in warm place for at least 8 hrs
Let the batter ferment overnight and mix well before use
Idly/Dosa batter ready

Notes

Use the handle when take out the dal or rice sticking inside grinder if you are beginner
After grinding the urad dal batter, you don’t need to take out and simply add washed rice then grind both, add salt right before taking out the batter
If you are living in a cold place keep the batter in oven for fermenting
Keep a plate under the batter bowl to avoid the batter spilling out after fermenting
If you are living in a hot place use cold water for grinding to avoid soreness
