ஆட்டு ஈரல் ரோஸ்ட் (Goat Liver Roast)
Goat Liver Roast is a spicy dry recipe. Mutton liver is rich in Vitamin A, which is beneficial for eyes. It also contains folic acid, iron and protein. This helps to improve cognitive abilities and muscle mass. I was so thin in my childhood days, so my mom prepares this specially for me to improve my health. Nowadays my kids like this combination of spices and the way of preparation.

Ingredients for Goat Liver Roast
Masala
Coconut – 1/2 cup shredded
Dry red chilli – 6
Garlic – 3
Curry leaves – 1 spring
Coriander seeds – 1 tsp
Black pepper – 1/4 tsp
Fennel seeds – 1/2 tsp
Gravy
Mutton liver – 1/4 kg
Small onion – 1/2 cup (chopped)
Fennel – 1/2 tsp
Ginger garlic paste – 1 tbs
Sesame oil – 3 tbs
Dry red chilli – 3
Garlic – 4
Curry leaves – 1 spring + 1 spring
Tomato – 1
Cilantro – 2 tbs + 1 tbs (chopped)
Turmeric powder – 1/4 tsp
Chilli powder – 1 tbs
Coriander powder – 1 tbs
Salt as needed
Directions
Pre-Preparation
Rinse the liver with water and clean 3 times.
Slice the liver into big pieces.
Grind Masala
Heat a pan and add shredded coconut then start dry roasting.
Add dry red chilli, pepper, coriander seeds and pepper.
Crush the garlic with skin and add to the roasting pan.
Add curry leaves and roast until the color changes.
Let the roasted spices cool down completely.
Grind the spices into coarse powder.
Prepare Gravy
Crush the garlic with skin.
Heat pan with oil and add fennel seeds.
After the seeds cracked add crushed garlic, curry leaves and dry red chilli in a same time.
Stir fry them for a minute and add chopped onion.
Sauté them just a little and add ginger garlic paste then chopped tomato.
Stir fry until tomato turn into mushy.
Add all the spice ingredients and stir again.
Pour 1/2 cup of water and add 2 tbs chopped cilantro.
Mix everything well and allow mixture to boil.
When you see the bubbles, add the liver pieces.
Stir the gravy until the spices well coated in liver pieces.
Close the pan and cook for 5 minutes in full flame.
Add the ground spices and mix everything well.
Now add chopped cilantro and curry leaves then give a final mix.
Switch off the flame, mutton liver roast ready.
Serve the liver roast with rice and rasam.
Notes
Cook the liver not more than 7 minutes otherwise it become hard.
Don’t grind the spices into fine powder.
Switch off the flame immediately after adding the ground spices.
If you don’t have non-stick pan, add little oil to fry grinding masala.

Pour oil in a pan, heat in medium flame Add fennel seeds Add crushed garlic, curry leaves and red chili together Saute a little Add chopped onion Saute little and add ginger garlic paste Also add chopped tomato Saute until tomato become mushy Add salt, turmeric power, chili and coriander powder Mix well Masala is well mixed now Pour 1/2 cup water Add 2 tbs cilantro and heat in high flame When you see bubbles, add liver pieces Mix liver pieces well Close with lid and cook for 5 minutes in full flame Now gravy is cooked Now add ground masala Give a good mix until masala well mixed Finally add 1 tbs cilantro and curry leaves Gently mix everything and switch off flame Mutton Liver Roast ready Transfer to a plate ஆட்டு ஈரல் ரோஸ்ட்
