முட்டை குழிப்பணியாரம் (Egg Kuzhipaniyaram)
Egg Kuzhipaniyaram is an easy snack with left over dosa/idly batter. This is very tasty as well and I started making this regularly at home for breakfast. This Kuli paniyaram can be eaten as is or with coconut chutney.
Ingredients for Egg Kuzhipaniyaram
Egg – 3
Dosa batter – 3 Scoop
Oil for Paniyaram pan as needed
Salt as needed
For Tempering
Curry leaves – 1 Spring
Mustard seeds & Urad dal – 1/4 tsp
Dried chilli – 3
Small onion – 4 finely chopped
Oil – 1/2 tbsp
Directions
Preparing Batter
Take a small pan and add 1/2 tbsp of oil.
Add Mustard seeds and urad dal, wait until mustart cracks.
Add Curry leaves then onoin and dried chilli.
In the mean time prepare the paniyaram batter.
Crack the three eggs one by one and whisk them until the egg white and egg yolk are completely mixed.
Add Salt with the egg mixer and mix it properly.
Now add the dosa batter and mix everything well.
Finally add the tempered spices to the batter.
Prepare Kuli paniyaram
Place the Kuzhipaniyaram pan on the stove top.
Wait until the pan fully heated.
Add a drop of oil in each hole of the pan.
Now fill the hole with the batter.
Then add little bit of oil around each hole.
Keep the flame medium high.
After a minute flip the paniyaram.
After 30 sec take that out.
Egg paniyaram is ready!
Serve this with Coconut chutney.
Notes
Dosa batter already have some salt so add salt only for egg.
Ratio for the paniyaram is 1 egg : 1 Scoop Dosa batter.
If the batter is so thick (Idly batter) mix some water, otherwise the panniyaram becomes very hard.
You can use sour batter or left over batter to this recipe.
