Mutton Liver Stir Fry

Mutton liver stir fry is a simple, quick and beginner friendly recipe. It takes just 15 minutes to cook. I already posted a different version of mutton liver roast recipe with lots of spices. But in this version I just used the homemade curry masala. Mutton liver have lots of health benefits. It is high in protein, rich in iron, packed with vitamins and minerals. It is very low in saturated fat.

Ingredients for Mutton Liver Stir Fry

Goat liver – 1/4 kg.
Small onion – 1 cup (chopped)
Tomato – 1
Ginger garlic paste – 1 tbs
Masala – 1.5 tbs
Turmeric – 1/4 tsp
Oil – 2 tbs
Salt as needed

Directions

Rinse the liver in running water.
Slice the liver into bite size pieces.
Heat oil in a pan.
Add onion and ginger garlic paste.
Saute the onion until it turns golden brown.
Add the chopped tomatoes and salt.
Stir fry the tomatoes until mushy.
Now add the turmeric, masala and mix well.
Pour a cup of water and cover the pan.
Let the gravy cook in full flame for 2 to 3 minutes or until the gravy thickens.
Now reduce the flame to medium and add some more water (if necessary).
Keep stirring the gravy until the onion and tomatoes mashed well enough.
Finally add the sliced liver.
Change the flame to medium high, then cover and cook for 4 to 5 minutes.
Then reduce the flame to low and let the gravy to emit oil for 3 minutes.
Switch off the flame.
Mutton liver stir fry ready.
Serve the gravy with rice and rasam.

Notes

Don’t over cook the liver as it will becomes very hard.
