Spicy Rigatoni Garlic Pasta

Spicy Rigatoni Garlic Pasta is strong in flavour and also a spicy pasta. This is my son’s recipe. He loves to try variety of Italian recipes and always enhance it to match our Indian taste. He cooked this for a big get together party. All the kids liked this pasta. Here is the recipe for you!

Ingredients for Spicy Rigatoni Garlic Pasta

Garlic Cloves – 8 minced
Corn bits – 1 cup
Cherry Tomatoes – 3 cups halved
Olive Oil – 4 tbs
Cooking wine / vegetable broth – 1 cup
Chili Flakes – 1 tsp
Tomato Paste – 2 tbs
Heavy Cream – 2 cups
All purpose Flour – 1 tbs
Rigatoni Pasta – 8 oz
Smoked Paprika – 1 tsp
Garlic Powder – 1 tsp
Sugar – 1 tsp
Salt & Pepper to taste
Freshly Grated Parmesan optional

Directions

Pre-preparation

Cook the pasta by adding salt.
Chop the tomatoes. 
Mince the garlic.

Sauce Preparation

Heat pan with olive oil and add the minced garlic and salt.
Saute the minced garlic until golden brown. 
Add the chopped tomatoes and continue saute until tomatoes soften and release juices. 
Pour the cooking wine and keep the flame low.
Add tomato paste and red chili flakes.
Let the mixture cook for 5 minutes. 
Pour the heavy cream and stir well.
Add flour and 2 tbs of water in a bowl.
Mix well and add that to the sauce mixture. 
Cook the sauce for 5-10 minutes or until the sauce thickens. 
Add all the seasoning (sugar, paprika, pepper, garlic powder and salt) according to your taste.
Sauce ready.

Final Pasta Preparation

Now add the cooked pasta into the sauce.
Cook in low flame for 5 minutes. 
Let the pasta mix well with the sauce. 
Finally add the corn and toss well.
Switch off the flame. 
Garnish the pasta with Parmesan cheese and pepper. 
Spicy Rigatoni Garlic pasta ready.

Notes

We prepared large quantity pasta for the party, that’s why the picture shows large quantity ingredients.
