மட்டன் சுக்கா – Delicious Mutton Sukka
Delicious Mutton Sukka is a spicy tasty dry curry made by cooking ‘evenly cut’ small chops of mutton with tempered onions, spices and masala powders. Mutton Chukka pairs up well with biryani, rice or even pulao varieties. I sometime use this on top of dosa for Kari Dosa as well. If you are more interested in semi-gravy type, try this recipe.
Ingredients for Mutton Sukka
For Sukka Masala
Fennel seeds – 1 tsp
Coriander seeds – 1 tsp
Cumin seeds – 1/2 tsp
Black pepper – 1/2 tsp
Dry red chilli – 2
For Gravy
Mutton – 1/2 kg
Turmeric powder – 1/4 tsp
Small onion – 1/2 cup (chopped)
Tomato – 1 (chopped)
Ginger garlic paste – 1 tbs
Chill powder – 1 tsp
Salt as needed
For Tempering
Sesame oil – 1 tbs
Fennel seeds – 1/2 tsp
Clove – 2
Cardamom – 2
Bay leaf – 2 small pieces
Cinnamon stick – 1/2 inch
Curry leaves – 1 spring
Directions
Pre-preparation
Dry fry the masala ingredients in medium flame.
Let the ingredients cool down completely.
Grind the masala into fine powder.
Pressure cook the mutton with salt and turmeric for 15 minutes in medium flame.
Prepare Sukka
Heat oil in a pan in medium flame.
Add all the tempering ingredients.
After sautéing for a minute, add chopped onion.
Then add ginger garlic paste.
Sauté until the color of onion changes into golden brown.
Add chopped tomatoes and stir until mushy.
Now add chilli powder, turmeric powder and salt.
Mix everything well and pour the water from cooked mutton.
Cook the gravy until it thickens.
Add cooked mutton into gravy and cook for 5 minutes.
Cover the pan and turn the flame into completely low for 5 minutes to emit the oil.
Finally add the ground sukka masala powder and mix well and switch off the flame.
Delicious Mutton sukka ready.
Notes
Depending on the goat meat, (young goat vs old), adjust cooking time.
