Delicious and Authentic Kesar Pista Kulfi

கேசர் பிஸ்தா குல்ஃபி – Kesar Pista Kulfi

Kesar Pista Kulfi is a traditional, dense, and creamy frozen dairy dessert. It’s made by simmering milk and thicken it then freezing it in molds. It’s popular in flavours like saffron, pistachio, cardamom, mango and rose and is typically served frozen on a stick or sliced garnished with nuts.

Ingredients for Kesar Pista Kulfi

Khoya/ Mawa

Milk – 1/4 cup
Heavy Cream – 1/2 cup
Milk powder(unsweetened) – 1/2 cup

Kulfi

Milk – 1 litre (5 cups)
Sugar – 1/2 cup
Khoya
Saffron few strings 
Cardamom powder – 1/4 tsp
Mixed nuts – 2 tbs

Directions

Milk Preparation

Heat 5 cups of milk in a pot.
When the milk starts boiling add the saffron and sugar.
Mix together and reduce the flame to low medium. 
Milk layers starts to form in the sides of the pot.
Take the layers and put it into the milk.
Cook the milk for 15 minutes or until thickens.
Keep the flame low and continue boiling.

Khoya Preparation

Mix heavy cream and milk powder in a pan.
Add 1/4 cup milk and mix well without any lumps. 
Cook this mixture in low medium heat. 
It turns into thick paste.
Keep cooking the mixture until we can slice into semi solid pieces as shown in the picture

Kulfi Preparation

Add khoya into thickened milk (still in flame).
Blend the khoya well with the thickened milk.
Continue to boil the thickened milk and khoya mixture for a minute. 
Now we can see the grainy texture. 
Add the mixed nuts and cardamom powder. 
Kulfi mixture ready.
Let it cool down to room temperature. 
Pour the mixture into kulfi molds.
Place the molds in freezer. 
After one hour insert the ice sticks in the center of the kulfi.
Freeze the kulfi at least 8 hrs.
Kesar pista malai kulfi is ready.

Serve Kulfi

Take the Kulfi out of freezer.
Show the mould in running water for 10 seconds. 
Twist the stick, the kulfi will come out easily. 
Garnish the kulfi (optional).
Enjoy the kulfi.

Notes

Malai kulfi is plain kulfi without nuts. 
I used almond, pistachios, cashews. 
If you don’t have molds, use tumbler or any vessel, whichever shape you prefer.
