Chicken Sukka Chettinadu Style

சிக்கன் சுக்கா – Chicken Sukka

Chicken sukka is a dry or semi dry, highly flavourful dish of chicken cooked in a masala of aromatics onion, ginger, garlic in ghee with dry roasted whole spices. It takes very less time to prepare as well. We may serve this as a starter or eat this with white rice or even with roti/ naan.

Ingredients for Chicken Sukka

Chicken – 1/4 kg
Small onion – 1 cup chopped
Ginger garlic paste – 1 tbs
Garlic – 3 crushed
Red chilli – 3
Tomato – 1
Fennel seeds – 1 tsp
Ghee – 1 tbs
Cinnamon – 3 medium size sticks
Cardamom – 3
Chilli powder – 2 tsp
Pepper powder – 1 tsp + 1 tsp crushed
Cumin powder – 1 tsp
Cashews – 1 tbs
Curry leaves – 1 spring
Sesame oil – 2 tbs
Turmeric powder – 1/4 tsp
Salt – as needed

Directions

Heat oil and ghee in a pan in medium flame.
Add fennel seeds and curry leaves.
After the leaves popped, add the red chillies, cashews, small onion, crushed garlic and ginger garlic paste.
Stir fry everything well until onion color changes.
Now add chopped tomatoes and salt as well.
Sauté the tomatoes until mushy.
Add all the spices and mix well.
Pour 1/2 cup of water and mix again.
Now add the chicken and mix well.
Cover the pan with lid and cook it in full flame until chicken is completely cooked.
Turn the flame into low and let the chicken emit oil.
Add the crushed pepper and switch off the flame.
Chicken sukka – சிக்கன் சுக்கா ready.
Serve the chicken chukka with rice or roti.

Notes

Usually boneless chicken is used for chicken sukka recipe but I always use chicken with bones.
Boned chicken releases more juices than boneless chicken which adds aroma.
If you want more spiciness, alternate the pepper with chilli flakes or chilli powder.
