Chicken Majestic
Chicken majestic is an Andra style dry starter chicken. This is made by deep frying thin strips of chicken and sautéing them in Andra style spicy sauce until well coated. This sauce is made from yogurt and few spices. Boneless chicken thighs is good to use for this recipe.
My whole family is addicted to this taste. I use to have this chicken with just rice and rasam. Chicken majestic is one of the best choice to serve as appetizer in a party.
Ingredients for Chicken Majestic
Marination
Boneless Chicken thighs – 750g
Turmeric – 1/4 tsp
Chilli powder – 1/2 tsp
Ginger garlic paste – 1 tsp
Egg – 1
Curd – 1/3 cup
All purpose flour – 1/4 cup
Salt as needed
Sautéing
Oil for frying + 2 tbs
Garlic – 2 tbs (minced)
Ginger – 1 tbs (minced)
Green chilli – 10-12 (slit)
Curry leaves – 2 spring
Curd – 1/4 cup
Chilli powder – 1 tbs
Turmeric powder – 1/4 tsp
Pepper powder – 1/4 tsp
Cumin powder – 1/4 tsp
Coriander powder – 1 tsp
Red chilli sauce – 1/4 cup
Soya sauce – 2 tbs
Cilantro – 2 tbs
Mint – 2 tbs
Lemon juice – 1/2 tbs
Salt as needed
Directions
Marination
Clean the chicken and cut that into thin strips.
Add all the marinating ingredients into a mixing bowl.
Mix everything well and let the chicken to marinate for 30 minutes.
Fry Chicken
Heat oil in a frying pan in medium flame.
Put marinated chicken one by one.
Fry the chicken and turn the side.
Once the chicken is fried, take out.
Sautéing
Pour 2 tbs oil in a pan and heat in medium flame.
Add minced ginger and garlic.
Then add curry leaves and green chilli.
Sauté them a little and add curd.
Mix well and add turmeric powder, chilli powder, pepper powder, cumin powder, coriander powder and salt.
Mix everything well and add chilli sauce and soya sauce.
Now add 1/4 cup of water and mix the sauce well.
Finally add the fried chicken and mix well to coat the spices all over the chicken.
Sprinkle chopped cilantro and mint.
Add lemon juice and give a final mix.
Chicken majestic ready.
Serve the chicken as appetizer or side for rice.
Notes
Don’t over fry the chicken because that makes chicken hard.
Adjust the green chilli quantity according to your taste.
Don’t skip the marination part.
