முழுக்கத்திரிக்காய் குழம்பு (Brinjal Curry)
Brinjal Curry is one of my favorite and this recipe will be loved by all brinjal lovers because I stuffed brinjal with masala, which gives good taste. The cooking time and procedure is simple and outlined here.
Ingredients for Brinjal Curry
Brinjal – 10 nos
Masala – 1 tbs
Chilli powder – 1/2 tbs
Mustard seeds and urad dal – 1/4 tsp
Fenugreek seeds – 1/4 tsp
Curry leaves – 1 spring
Turmeric powder – 1 pinch
Gingelly oil – 3 tbs
Small onion – 1 cup (chopped)
Tamarind – lemon size
Coconut – 1/2 cup chopped
Salt as needed
Stuffing Ingredients
Masala – 1.5tbs
Gingelly oil – 2 tbs
Salt as needed
Pre-Preparation
Soak tamarind and extract juice from that.
Wash brinjals and cut off the stem ends.
Slice the brinjals as shown in the picture.
Mix stuffing ingredients and fill the stuff inside the brinjals.
Let it sit for 10 to 15 minutes.
Directions
Take a 5ltr pressure cooker and pour oil and let it heat.
Add mustard seeds, urad dal, fenugreek seeds and curry leaves.
After the seeds cracked, add onions and fry it until golden brown.
Add stuffed brinjals, tamarind extract, masala, chilli powder, turmeric, salt.
Close the cooker with lid (Don’t put weight).
Keep the flame low and let it cook for 5 minutes.
Grind the coconut into smooth paste.
Pour the coconut paste into the cooker and adjust salt, water consistency.
Pressure cook this curry for 5 whistle.
Brinjal Curry is now ready.
