பூந்தி லட்டு – Boondi Ladoo
Boondi ladoo is one of the variety of ladoo and is my son’s favorite recipe as well. Making this ladddu has several steps but it is easy to prepare with little patience. I always call my son as ladoo because of his round face. He likes the name and also the boondi ladoo. He asks me to prepare this boondi ladoo as a treat for his birthday every year.
Makes around 15 ladoo.

Ingredients for Boondi Ladoo
Besan flour – 1 1/4 cup
Sugar – 1 1/2 cup
Water for syrup (enough to immerse)
Saffron – 5-10 strings
Sugar candy – 1 tsp (optional)
Cashews – 1 tbs
Dry grapes – 1 tbs
Cardamom – 3
Ghee – 1 tbsp
Directions
Prepare Batter
Sift besan flour using a sifter and take it in a mixing bowl.
Pour water into the flour and mix well.
Mix the batter into dosa batter consistency.
Make Boondi
Heat oil in a frying pan.
Pour the batter through boondi laddle.
Hold the laddle little above the frying pan.
Take out the boondi before it gets crispy.
Prepare Syrup
Heat sugar, saffron and water in a pan.
Cook the syrup until one string consistency.
Change the flame into medium until it starts to become crystal (color changes to white).
Switch off the flame.
Prepare Sweet Boondi
Add the boondi to the sugar syrup and mix well.
Heat ghee in a pan and add cashews, dry grapes.
Fry them into golden brown and add that to the boondi.
Crush the cardamom and sugar candy little bit then add that to boondi.
Let the boondi to cool down completely.
Sweet boondi ready.
Make Ladoo
Hold little amount of boondi in your palm and shape it to round balls.
Make all the boondi into round shape balls.
Place the ladoo’s in a plate.
Let the ladoo to dry for 30 minutes.
Boondi ladoo ready.
Notes
If your boondi and syrup mixture become dry and can’t make shape, add little bit of water (1 tbs) and heat a little.
Fry the boondi in full flame to get round shape boondi.

Take flour in bowl and add water; Mix well 
Make batter in to dosa batter consistency
Make Boondi

Heat oil in a pan 
Use boondi laddle 
Pour batter on the laddle 
Boondi drops nicely 
Heat in high flame 
Once bubble stops, take it out 
One set is done
Make Syrup

Take sugar and saffron in a pan 
Pour water and heat 
One string consistency 
Crystal forms, switch off flame
Make Sweet Boondi

Add it in sugar syrup pan 
Continue adding all and make sure boondi immerse in syrup 
Gently press 

Take sugar crystals in a mortar 
Crush into smaller pieces 
Pour ghee in a pan 
Add cashews 
Also add dry grapes 
Golden fry all 
Add golden fried cashes and dry grapes 
Also add crushed sugar crystals 
Give a good mix 
Take cardamom in mortar 
Add crushed cardamom and mix well 
Sweet boondi is ready; let it cool down
Prepare Ladoo

Take little amount of boondhi in hand 
Press gently in palm and make nice circle shape 
One laddu ready 
Place it in a plate 
Continue until done 
Boonthi laddu ready
