புழுங்கல் அரிசி முறுக்கு (Boiled Rice Murukku)
Boiled Rice Murukku is an alternate to raw rice murukku. Preparing murukku using raw rice is a traditional way of preparing it and the flour quality is very important. When we don’t have access to quality raw rice, we can still use boiled rice for making murukku. Here is the recipe for you.
Ingredients for Boiled Rice Murukku
Boiled Rice (Puzhungal arisi) – 3 cup (600 gm) (Can use Idly rice)
Urad dal – 3/4 cup (150 gm)
Butter – 75 gm
Sesame seeds – 2 tbsp
Salt as needded
Directions
Prepare Dough
Soak the rice for at least 2 hours.
Grind the rice to fine paste.
Fry the Urad dal to golden color and let it to cool down.
Take the Urad dal into the blender and make it to fine powder.
Sift the Urad dal powder and remove the large particles.
Grind the large particles again in the blender and sift it again.
Now add the rice batter, urad dal powder, butter, salt and sesame seeds.
Mix everything, add water little by little as per need.
Now murukku dough is ready.
Fry
Take a big pan and pour oil (see pic for reference) and heat in high flame.
Fill the murukku dough into the mold and press it in a small plate.
When the oil is ready (See notes), put the molded murukku into the pan.
Keep the flame to medium high.
Flip the murukku after that half cooked.
When bubbles stopped take the murukku out.
Note
To see if oil is ready – pinch little dough and put it in the pan; if bubbles comes out immediately, then the oil is ready.
Use flat pan instead of shallow pan for best results.
Don’t add too much butter it will break the murukku easily while frying.
