பீன்ஸ் பொரியல் (Beans Poriyal)
Beans poriyal is a good source of fiber. Young green beans usually tastes yum, so I always buy young and soft beans that are of same length for this recipe. Matured beans have more fiber but that tastes chewy and tastes less. I cook this beans masala with coconut milk, so it’s full of healthy and tasty.
Ingredients for Beans Poriyal
Green Beans – 200g
Small onion – 2 (chopped)
Coconut – 1 small piece
Oil – 2 tsp
Masala – 1 tbs
Turmeric powder – pinch
Curry leaves – 1 spring
Mustard seeds & urad dal – 1 tsp
Salt as needed
Directions
Rinse the green beans in water.
Pinch the end of the beans and remove the fiber.
Chop the beans into small pieces.
Cook the chopped beans with salt and water.
Heat oil in a kadai and add mustard seeds & urad dal.
After the seeds cracked, add curry leaves.
Add chopped onion and sauté them until golden brown.
Extract milk from coconut and pour that to the kadai.
Add masala, turmeric and salt.
Also add the cooked beans when bubbles started.
Mix everything well and cover the kadai with lid.
Keep the flame full and cook until the liquid reduced completely.
Reduce the flame to low and let the poriyal to release oil.
Green beans poriyal ready.
Serve the பொறியல் with rice, chapathi.
Notes
Young beans usually don’t have fiber to take out.
You may use ground coconut paste instead of coconut milk.
If you want the poriyal more spicy, add 1 tsp of chili powder for this recipe.
You may also add the water from cooked beans while adding beans.
