அவியல் (Aviyal)
Aviyal is a type of vegetable stew that is a combination of vegetables cooked with coconut and coconut oil. This is a traditional South Indian recipe, rarely available in many restaurants. Avial is served with rice or Adai. We can have up to 15 different vegetables in this traditional recipe. Here I used beans, carrot, peas, plantain for Avial (simple version) .
Ingredients for Aviyal
Grinding
Coconut – 1/3 cup (chopped)
Green chilli – 3
Cumin seeds – 1 tsp
Vegetables
Carrot – 1
Beans – 1/4 cup
Peas – 1/4 cup
Plantain – 1/2
Tempering
Mustard seeds & urad dal – 1/2 tsp
Coconut oil – 1/2 tbsp
Curry leaves – 1 spring
Hing – 1 pinch
Other Ingredients
Curd – 1 tbs
Salt as needed
Directions
Peel the skin off the carrot and slice it lengthwise.
Peel the skin off the plantain and slice it lengthwise.
Place all the veggies in pan then add salt and water.
Cook the veggies until fully cooked.
Grind all the grinding ingredients into fine paste by adding little water.
Add the ground paste into the cooked veggies and mix well.
Cook the gravy for 5 minutes in medium flame.
Heat coconut oil in a pan and add mustard seeds & urad dal.
After the seeds cracked add curry leaves.
Switch off the flame and add hing.
Add the tempered ingredients to the gravy.
Now, add salt and mix well.
Check the consistency and switch off the flame.
Finally add the curd and mix well.

Notes
If you’re preparing this as side dish for rice, reduce the coconut amount to 1/4 cup.
