அவல் பாயாசம் (Aval Paayaasam)
Aval paayaasam is prepared with flatten rice (Aval), milk and jaggery. Payasam is a special dish usually served in South Indian marriages. In North India, this recipe is called as kheer. This is the first time I prepared this payasam and it came out very well. Everyone in my family loved this Aval payasam. It’s very easy to prepare. Here you go!

Ingredients for Aval Paayaasam
Aval / flatten rice – 1/2 cup
Jaggery – 1/2 cup
Milk – 3 cup
Cashews – 2 tbs
Ghee – 2 tbs
Dry grapes – 1 tbs
Cardamom – 3
Directions
Heat ghee in a pan and roast cashews & dry grapes.
Take out the roasted cashews and dry grapes.
Add Aval into the ghee and roast for 2 minutes.
Pour 3 cups of milk into the pan.
Boil the Aval in medium flame for 10 minutes or until the aval soften.
Now add the crushed jaggery and mix well.
Cook this for 2-3 minutes in medium flame.
Add the roasted cashews and dry grapes then mix well.
Switch off the flame.
Crush the cardamom and sprinkle over it.
Serve the Aval payasam hot or cold.
Notes
Depends on your sweetness needs, you may increase and decrease jaggery.
Don’t over cook the jaggery and milk, because it will curdle.

Ingredients 
On a pan, add ghee

Golden fry cashews and dry grapes 
Take fried cashews, dry grapes out 
Add Aval in the pan 
Roast aval for 2 minutes 

Pour milk and mix well 
Let the milk boil 

Put jaggery in to the mix 
Mix well 
Cook for 2 to 3 minutes 
Check consistency and sugar level 
Now, add fried cashews, dry grapes 
Crush Elaichi 
Crushed elakkai 
Add crushed elakkai in paayasam 
Mix well 
Aval Paayaasam ready 
Serve in a bowl
