நெல்லிக்காய் ஊறுகாய் – Nellikai Oorugai
Nellikai oorugai is a spicy pickle made with gooseberry wedges, red chilli, mustard and fenugreek powder. The method used for making gooseberry pickle is quick and simple. We can prepare this pickle with raw gooseberries or steamed gooseberries. Raw amla pickle’s shelf life is longer than steamed gooseberry pickle’s shelf life. But raw pickle takes much more time to soften. Gooseberry does have lots of health benefits, it’s high in vitamin and dietary fiber.
Ingredients for Nellikai Oorugai
Nelikkai/ gooseberry – 1/4 kg
Rock salt – 3.5 tbs (60gm)
Kadugu podi – 1.5tsp
Vendayam podi – 1.5 tsp
Perungaya podi – 2 tsp
Chill powder – 1/3 cup
Oil – 1/2 cup
Directions
Pre-preparation
Dry roast the ingredients (Kadugu, vendayam and perungayam) and grind them into fine powder.
Prepare Oorugai
Rinse the gooseberries in water.
Dry the gooseberries with cotton towel or paper towel.
Slice and take out the seeds from the gooseberries.
Chop the gooseberries into bite size.
Take a glass bowl and add gooseberries and other ingredients except oil.
Mix everything well and add oil.
Give a final mix and keep that for three days.
Mix the pickle once a day.
Transfer the pickle into glass or ceramic jar.
Nellikkai urugai ready.
Serve the oorukai with curd rice.
