Authentic Bhai Veettu Chicken Briyani

Bhai veettu chicken briyani is a tasty version of chicken biryani. I’m so curious to try different varieties of biryani especially this one. I tasted this biryani at one of my best friend’s house and really liked the flavor and aroma. I asked her to share the recipe, tried once and got excellent result. My kids loved this method than my usual recipe. 

Ingredients for Bhai Veettu Chicken Briyani

Chicken – 1/2 kg
Basmati rice – 1.5 cups
Onion – 2 
Tomato – 2
Green chilli – 4
Ginger garlic paste – 2 tbs
Ghee – 50g
Sesame oil – 50 ml/ 1/4 cup
Bay leaves – 2
Cardamom – 4
Cloves – 4
Cinnamon – 2 big pieces 
Curd – 1/2 cup
Cilantro – 1/2 cup
Mint – 1/4 cup
Lemon – 1/2
Chilli powder – 2 tsp
Turmeric powder – 1/4 tsp
Biryani masala – 2.5 tsp

Briyani Masala

Cardamom – 15
Cloves – 15
Cinnamon – 2 tbs

Directions

Pre-preparation

Grind the masala ingredients into fine powder. 
Cut the onion into thin slices.
Soak basmati rice for 30 minutes.

Briyani Stuffing

Heat biryani pot with ghee and oil in medium flame.
Add the bay leaves, cardamom, cloves and cinnamon and saute a little. 
Also add thin sliced onion and saute for until it turns golden brown. 
Now add the ginger garlic paste and saute until the raw smell goes away. 
Add the chopped tomatoes and salt.
Stir fry the tomatoes until mushy.
Now add the masala, chilli powder, turmeric powder and mix well.
Pour the curd, lemon juice and add cilantro, mint.
Mix everything well and add the chicken. 
Let the chicken well coat with the spice mix.
Keep the flame medium and cook the chicken. 
When the chicken cooked 3/4 level, pour 3 cups of water. 
Check the salt level and adjust if needed.

Prepare Briyani

Filter water and add the soaked rice when the water starts boiling. 
Keep cooking the rice in medium flame with lid closed.
Stir occasionally to avoid burning.
Switch off the flame when the rice cooked 3/4 level.

Dum

Place one dosa pan in low flame stove.
Keep the 3/4 cooked biryani pot over the heating dosa pan.
Now, place the another hot dosa pan over the biryani pot (make sure it close the pot completely).
Keep this setup for 15 minutes. 
Switch off the flame. 
Let it set for another 10 minutes. 
Bai veetu biryani ready.
Serve the biryani with raita & gravy.

Notes

It’s not necessary to heat the top side dosa pan.
If you don’t want to use dosa pan over the pot, you can close with lid. 
If your lid is glass, you can put foil sheet over the pot and close with lid.
