Arisi Puttu

அரிசி புட்டு (Arisi Puttu)

Arisi Puttu is a traditional breakfast in South India, especially in Kerala. This Puttu is mostly made from rice, shredded coconut. Puttu may be prepared as sweet version and also savour version. Also Puttu can be prepare by using wheat, ragi and other grains also. Every Saturday in my hostel they serve Puttu, banana and chickpeas curry. Sweet version is my favorite.

Ingredients for Arisi Puttu

Raw rice – 1 cup / rice flour – 2 cups 
Shredded coconut – 1 cup 
Sugar – 1/2 cup 

Directions

Take the rice flour in a mixing bowl. 
Sprinkle water over the rice flour and mix well.
When you feel the flour is moisture with water, check the flour consistency. 
Hold some flour and if that can make shape, stop adding water.
Heat water in idly pot. 
Spread a wet cloth over the idly plate.
Transfer the rice flour over the wet cloth.
Close the idly pot lid and cook for 15 minutes in full flame. 
Take out the Puttu and transfer to the mixing bowl. 
Crush the lumps and mix well.
Add the shredded coconut and sugar then mix well.
Rice Puttu ready.
Serve the Puttu with banana. 

Notes

If you’re using raw rice, soak the rice for 2 hours and dry that in shade for 1 hour. Grind the rice then use it.
If you’re using store bought rice flour, choose correct one (don’t choose idyappam flour).
While mixing water, just sprinkle, don’t pour water.
Carefully crush the lumps while adding water. 
If you’re doing large amount, mix with the help of mixer or food processor.
