பாதாம் பட்டர் பிஸ்கட் (Bakery style Almond Butter Biscuit)
Almond Butter Biscuit is a variety of butter biscuit prepared with almond. Almond has lot of health benefits and tasty as well. Here is the recipe!
Ingredients for Almond Butter Biscuit
All purpose flour / Maida – 2 & ¾ Cups (350 g)
Butter – 1 cup (250 g)
Corn flour / corn starch – 1/2 cup (65 g)
Salt – 1/4 tsp
Granulated sugar – 3/4 cup (150 g)
Egg yolks – 3
Vanilla essence – 1/2 tbs
Almond – 1/2 cup (70 g)
Directions
Prepare Dough
Keep the butter in room temperature for one hour.
Shred / grate the almond in a grater.
Take the sugar in a blender and powder it.
Sift all the dry ingredients and set aside.
Take a big mixing bowl and add the softened butter.
Beat the butter with hand mixer then add powdered sugar.
Again beat well until combined.
Now add the egg yolks and beat well.
Then add the dry ingredients little by little and mix with spatula.
Finally add the grated almond and mix well.
Knead the dough with hands until everything well combined.
Wrap the dough with plastic wrap and keep it in refrigerator for 30 minutes.
Dough ready.
Prepare Biscuit
Divide the dough into four pieces and roll it for 1 inch thickness.
Use cookie cutter and cut the dough into whatever shape you want.
Place the shaped dough in buttered cookie sheet.
Preheat the oven to 360°f/ 180° c.
Place the sheet in to the oven and cook for about 12 minutes (Mini cookies).
Take the sheet out and let it cool.
Almond butter cookie is ready.
Store cookies in an airtight container.
Notes
If you want to do with half portion of flour, then just add one egg yolk, which will be enough for the cookie.
Depends on the oven, time may vary. Keep eye on the cookie after 10 minutes.
You can add more almonds if you like.
