அதிரசம் (Adhirasam)
Adhirasam is a traditional South Indian sweet recipe and this is made by raw rice and jaggery. This is a special recipe prepared for Diwali celebrations. Traditional recipe usually takes few days to prepare, ferment the rice mix in earthenware with cotton cloth closed for 3 – 4 days.
Ingredients for Adhirasam
Raw rice – 1 cup
Jaggery – 3/4 cup (finely crushed)
Cardamom – 2
Water – 1/4 cup + 1 tbs
Oil for frying
Directions
Rice flour preparation
Soak the rice for one hour.
Drain the water and spread the rice in a dry cotton cloth.
Place the cloth in partial shade for one hour.
Transfer the rice and cardamom to a blender jar and grind well.
Sift the flour and transfer that to a bowl.
Prepare Syrup
Add jaggery and water in a pan.
Heat the pan until the jaggery completely dissolved.
Filter the jaggery water to remove any dust and heat again until one string consistency.
Prepare Dough
Pour the syrup little by little to the rice flour.
Mix everything well and cover the dough with cotton cloth.
Ferment the dough for at least 2 days.
Make Athirasam
Heat oil in a frying pan.
Keep the flame medium low.
Shape the dough in a polytene sheet or banana leaf greased with oil.
Add the shaped dough into oil.
Fry the adhirasam until completely cooked.
Follow the same instructions and fry all the dough.
Adhirasam ready.
Notes
Add the syrup as you needed, after reaching the consistency stop using the syrup.
After 2 days, if your dough is watery add 1 tbs rice flour.
If dough is very hard, add 1 tbs of warm milk / water / jaggery syrup.
in case if your adhirasam is breaking, means your syrup consistency is wrong.
If your அதிரசம் is not puffy your dough is hard.
