சுண்ட வத்தல் (Sundavathal)
Sundavathal is made from sundaikkai. Sundakkai is also known as turkey berry, prickly nightshade, shoo-shoo bush, wild eggplant and pea eggplant. It helps increase hemoglobin in blood and boost immune power. It is also known to help with type-2 diabetic patients. We can cook சுண்டைக்காய் directly in gravy or can make vathal to prepare vatha kulambu or vadagam.
Ingredients for Sundavathal
Sundaikkai – 1 1/4 cup
Water – 1 cup
Salt – 1/4 tsp
Directions
Wash the sundaikkai and take out the stems.
Half split the sundaikkai (see picture).
Add 1 cup of water, 1/4 tsp salt and sundaikkai.
Half cook the sundaikkai and drain the water.
Spread the sundaikkai in a plate.
Dry sundakkai under the sunlight.
Leave the sundakkai under sunlight until completely dried.
Store vathal in a ziplock cover (or air tight container).
Sundakkiai vathal ready.
Take oil in a frying pan and fry sundakkai in medium flame.
Serve with curd rice.
Note
You can use this sunda vathal for vatha kulambu also.
