Szechuan Sauce

Szechuan sauce is a sauce prepared by using the base of soy sauce. Ginger, garlic, vinegar, chilli, sugar are the main ingredients for the sauce. We may choose any chilli variety depending on the spice level and for which recipe that we are going to use this sauce. I used Kashmiri chilli here that gives dark red color with mild spice level.

Ingredients for Szechuan Sauce

Kashmiri chilli/ dry red chilli – 2 cups
Garlic – 1/4 cup (finely chopped)
Ginger – 2 tbs (finely chopped)
Soy sauce – 2 tbs
Oil – 1/4 cup
Sugar – 1 tsp
Vinegar – 2 tbs
Water – 1/4 cup
Pepper – 1/2 tsp
Tomato sauce – 2 tbs
Salt as needed

Directions

Soak the chilli for 30 minutes in water.
Drain the water and grind the chilli into fine paste.
Heat a pan with oil.
Add the garlic and ginger then sauté for a minute.
Then add ground chilli paste to the pan.
Sauté the sauce for 2 minutes.
Pour 1/4 cup of water and adjust the consistency.
Cover the pan and cook the sauce for 15 minutes in low flame.
Now add all the other ingredients and mix well.
Szechuan sauce ready.
Store the sauce in a bottle or jar and keep it in refrigerator.
