Blueberry cobbler is a great option for a healthy dessert to have on hand when that sweet cravings kicks in. Cobbler’s name comes from it’s cobbled texture which is a result of spooning or dropping the topping over the fruit rather than distributing it equally.
My daughter is a berry lover, so she asks me to bake this frequently.

Ingredients for Blueberry Cobbler

Blueberry – 3 cups
Butter – 1/2 (softened)
Sugar – 1/2 cup + 3 tbs
Orange juice – 1/3 cup
All purpose flour – 2/3 cup
Baking powder – 1/4 tsp
Egg – 1
Vanilla extract – 1/2 tsp
Salt – 1 pinch

Directions

Preheat the oven into 375°F (190°C).
Rinse the blueberry in water and place that in a baking pan (8 inch square pan).
Add 3 tbs sugar, orange juice over the blueberry and mix everything well and set aside.
Sift the flour, baking powder and salt.
In a mixing bowl beat the butter and sugar until fluffy.
Crack a egg and add the bowl, pour vanilla extract then beat again.
Add the sifted ingredients little by little and mix well.
Drop batter by rounded tablespoon over the blueberry mixture as shown in the picture.
Try to cover as much of filling as possible.
Place the pan in the preheated oven.
Bake the cobbler for 35-40 minutes OR until topping changes to golden brown and filling is bubbling.
Blueberry cobbler ready.
Serve the dessert as small slices.

Notes

Fresh baked blue berry cobbler tastes so good, we can keep this in room temperature for up to 3 days.
You may use frozen blueberry as well for this recipe.
