மாங்காய் சாதம் – Raw Mango Rice

Raw Mango Rice called as mangai satham is one of the seasonal variety rice which is made with raw grated mango along with simple tempering ingredients. It is an easy to prepare and quick time recipe. One of my friend brought this mangai sadam as lunch some days during my college days and I liked it very much. I’m a big fan of her mom’s mango rice.

Ingredients for Raw Mango Rice

Rice – 1.5 cup (cooked)
Raw mango – 1/2 cup (grated)
Sesame oil – 2 tbs
Peanuts – 2 tbs
Green chilli – 2 
Mustard seeds & urad dal – 1/4 tsp
Channa dal – 1 tsp
Dry red chilli – 2 
Hing – 1/2 tsp
Curry leaves – 1 spring 
Cilantro – 1 tbs
Salt as needed 

Directions

Heat oil in a pan and add mustard seeds, urad dal, channa dal.
Add curry leaves, after the leaves popped, add chopped green chilli and red chilli. 
Sauté them a little then add peanut, hing and salt. 
Mix everything well and add the shredded mango. 
Stir fry the raw mango for a minute then add the cooked rice. 
Mix well to coat the spices and mango all over the rice.
Drizzle some chopped cilantro. 
Mango rice ready.
Pack the mango rice as lunch. 

Notes

Cook 1/2 cup rice to get 1.5 cup cooked rice. 
I grated mango with skin, you may peel off the skin then grate as well.
You may use cashews for this recipe too.
