Mushroom Briyani

காளான் பிரியாணி (Mushroom Briyani)

Mushroom Briyani is one of the favorite biriyani in vegetarian category. Mushroom adds a nice flavor to biriyani which tastes like mutton briyani. I always prepare this with basmati rice, which adds nice texture as well.

Ingredients for Mushroom Briyani

Mushroom – 8 oz (1/4 kg)
Basmati rice – 1 cup
Oil – 2 tbs (optional)
Ghee – 2 tbsp
Bay leaves – 2
Onion – 1 medium size
Tomato – 1
Cilantro – 1/2 cup
Mint – 1/2 cup
Ginger garlic paste – 1 tbs
Green chilli – 3
Cardamom – 3
Cloves – 5
Cashew nuts – 2 tbs
Curd – 1/4 cup
Lemon juice – 1 tsp
Water – 1 cup
Salt as needed

Spices

Black pepper powder – 1/4 tsp
Garam masala powder – 3/4 tsp
Red chilli powder – 1 tsp
Turmeric powder – 1/4 tsp
Coriander powder – 1 tsp
Cumin powder – 1/2 tsp

Pre preparation

Soak the rice for 30 minutes in water.
Wash the mushroom and slice it.

Directions

Take a pressure cooker and pour ghee.
Then add bay leaves, cardamom, cloves and cashew nuts.
Roast them for a minute, then add sliced onion and ginger garlic paste.
Fry the onion until golden brown color.
Now add sliced green chili and chopped tomato.
Saute them until mushy.
Add all the spices and salt, then mix everything well.
Pour the curd and give a good mix.
Add the sliced mushroom to the pressure cooker.
Close the lid and leave the flame in sim for 5 minutes.
Mushroom release some water.
Add chopped cilantro and mint into the pressure cooker.
Add the soaked rice, lemon juice and one cup of water.
Give a final mix and close the cooker.
Put on the weight and set the flame to low.
Pressure cook the மஷ்ரும் பிரியாணி for one whistle – 8 minutes.
After releasing the pressure, open the cooker.
Mushroom biriyani ready.
