கிள்ளு வடாம் (Killu Vadam)

Killu Vadam is a favorite recipe for everyone. I always used to think it is hard to make it at home and buy it from store but I did not like the salt level in store bought vadagam. So I decided to try it at home and was able to successfully make it in first attempt itself. Here is the simple recipe to make vadakam in small quantity at home.

Ingredients for Killu Vadam

Fermented rice (Palaya satham) – 2 cups
Small onion – 15
Cumin seeds – 2 tsp
Green chilli – 2
Salt as needed

Directions

Pre-preparation:

Prepare palaya satham using sappattu arisi.
Take left over rice in a bowl and add water until fully immerse the rice.
Leave that over night.

Prepare batter:

Filter the water out as much as possible and take satham.
Take blender and add satham, cumin seeds, green chilli, salt and blend it well.
Transfer the rice mix into a mixing bowl.
Add the chopped small onion into rice mixture.
Mix everything well.
Dough is ready now.

Prepare Vadakam:

Take a pinch of dough and place it in the cotton cloth.
Continue this for entire batch; then place the batch under direct sun for 3 – 4 days.
Flip the vadam at least once everyday that helps to dry soon.
After 3 – 4 days, the vadam gets fully dried.
Killu vadakam ready.
Fry the vadagam in medium heat.

Notes

If you have large batch, use a big cotton cloth.
If you have small batch, take a plate and spread a plastic wrap on the plate.
You may remove the vadam from cotton / plastic wrap when the vadam won’t stick in the plate.
Store the வடகம் in airtight container.
You may add more water to this recipe and make thin crispy vadam.
